Ingredients:
- 1 cup all-purpose flour
- 1/2 cup almond flour (for extra chewiness)
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup coconut oil, melted
- 3/4 cup brown sugar
- 1/4 cup maple syrup (or agave syrup)
- 1 tsp vanilla extract
- 1/2 cup vegan dark chocolate chips
- 1/4 cup chopped walnuts (optional for crunch)
Instructions:
- Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
- In a bowl, whisk together flour, almond flour, baking soda, and salt.
- In a separate bowl, combine melted coconut oil, brown sugar, maple syrup, and vanilla extract. Whisk until smooth.
- Gradually add the dry ingredients into the wet mixture, stirring until fully combined.
- Fold in the vegan chocolate chips (and walnuts if using).
- Scoop tablespoon-sized portions of dough onto the baking tray, leaving space between each cookie.
- Bake for 10-12 minutes, or until the edges are golden but the center remains soft.
- Allow the cookies to cool slightly before indulging.
