Soft, chewy, and oh-so-chocolaty — a guilt-free indulgence for every sweet tooth!

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup almond flour (for extra chewiness)
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup coconut oil, melted
  • 3/4 cup brown sugar
  • 1/4 cup maple syrup (or agave syrup)
  • 1 tsp vanilla extract
  • 1/2 cup vegan dark chocolate chips
  • 1/4 cup chopped walnuts (optional for crunch)

Instructions:

  1. Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a bowl, whisk together flouralmond flourbaking soda, and salt.
  3. In a separate bowl, combine melted coconut oilbrown sugarmaple syrup, and vanilla extract. Whisk until smooth.
  4. Gradually add the dry ingredients into the wet mixture, stirring until fully combined.
  5. Fold in the vegan chocolate chips (and walnuts if using).
  6. Scoop tablespoon-sized portions of dough onto the baking tray, leaving space between each cookie.
  7. Bake for 10-12 minutes, or until the edges are golden but the center remains soft.
  8. Allow the cookies to cool slightly before indulging.

Pro Tip: For extra decadence, sprinkle a pinch of sea salt on top before baking.
