Ingredients:

  • 1 cup Medjool dates, pitted
  • 1/2 cup almonds (or your favorite nuts)
  • 1/4 cup shredded coconut (unsweetened)
  • 2 tbsp peanut butter (or tahini for a nut-free option)
  • 2 tbsp cocoa powder
  • 1 tbsp chia seeds (for extra fiber and crunch)
  • 1/2 tsp cinnamon (optional for warmth)
  • 1/4 tsp salt
  • 1-2 tbsp water (if needed for consistency)

Instructions:

  1. Blend the dates in a food processor until they form a sticky paste.
  2. Add almondsshredded coconutpeanut buttercocoa powderchia seedscinnamon, and salt to the food processor.
  3. Pulse until everything is well combined. If the mixture feels too dry, add 1-2 tbsp of water to help it stick together.
  4. Scoop out portions and roll them into bite-sized balls using your hands.
  5. For an extra touch, roll the energy bites in shredded coconutcocoa powder, or crushed nuts.
  6. Chill in the fridge for at least 30 minutes to firm up.
